Solar drying is a promising alternative for the drying of fruits and vegetables particularly in Nigeria that receives over 20KWh/m2 average annual insolation (Hinrichs and Kleinbach, 2002). The method is hygienic, environmental friendly and produce high quality products when compared with sun drying. Imported forced high dryers are too costly to be acquired by most local farmers and processors and most of them are not suitable for drying of some fruits and vegetables that requires low temperature. In view of this, a solar dryer for fruits and vegetables was proposed for development. The prototype dryer consists of the following major components: the solar collector; the drying chamber, the heat storage chamber which is an enclosed partition with stones at the sides and below the drying chamber and the air duct which houses a suction fan. Drying will be achieved by direct radiative heating from the sun, conductive heating from the absorber plate in the collector and convective heating from the fan. The capacity of the proposed dryer is 15kg per batch. The heat storage chamber is expected to keep the temperature of the stones inside the drying above the ambient temperature to prevent moisture re-absorption particularly at night and during period of low insolation. Thus, continuous drying of product to the required safe moisture content is achievable using the equipment.
