PINEAPPLE JUICE PRODUCTION
Pineapples can be consumed fresh, cooked, juiced, and preserved. They are found in a wide array of cuisines. Pineapple juices are produced from pineapple fruits. Fruit Juice is an unfermented but fermentable natural juice obtained by a mechanical process from wholesome fruits.
COWPEA FLOUR PRODUCTION
The cowpea is indigenous to Africa, but also widely grown in other continents. An important source of protein, it is consumed as a boiled legume, alone or mixed with other foods such as rice, maize, plantain, yam, cassava and vegetables. The preparation of these products is often based on traditional methods, which could be laborious and time-wasting. Cowpea flour is produced from cowpea and can be used to make traditional foods like “akara” (fried cowpea-paste) and “moinmoin” (steamed cowpea-paste). It is a cheap source of protein.
KUNU PRODUCTION AND PRESERVATION
Kunu is a fermented cereal-based food drink which is a good source of cheap calorie supply. It is refreshing, filling and rich in vitamins especially B1 and B2 and essential mineral elements. Kunu drink is originally consumed in the North but its acceptance has now cut across the country. Kunu prepared by the traditional method has short shelf-life, and therefore, requires adequate preservation to make it shelf-stable and of high keeping quality, an intervention made by FIIRO.
SOY-OGI PRODUCTION
The product, Soy-Ogi is a highly enriched protein food. The traditional Ogi is a fermented maize breakfast cereal which is low in protein content due to low protein content of maize. Soy-Ogi is Ogi fortified with soybeans to improve its protein content. Both infant and adult formulae are available.
ZOBO DRINK PRODUCTION AND PRESERVATION
Zobo drink is extracted from the flower Hibiscus Sabadariffa by hot water extraction method. The drink is consumed as beverage for its nutritional and medicinal value. The raw material; Roselle Calyces is found in commercial quantities especially in Northern part of Nigeria.
FULL FAT SOYA PRODUCTION
Full Fat Soya is a product obtained when raw soybeans is cooked in an extruding machine. It is mainly used in animal feeds formulation. Edible soy oil can be extracted from it and the cake sold to feed millers.
PALM WINE BOTTLING AND PRESERVATION
Palm wine is largely consumed in Nigeria and in some parts of Nigeria, the production and consumption of palm wine is on a scale that may be regarded as equivalent to the brewing industries of other countries. The main sources of getting palm wine in Nigeria are the oil palm, Elaeisis guineasis and the raphia palm, Raphia Jookeri palm wine is obtained by tapping the young flowering spathe of the respective palms. The main limitation of this product is that palm wine ferments rapidly and turns sour within a period of twenty four hours.
SOY-DAWADAWA PRODUCTION
Dawadawa is the Hausa name for fermented food condiment made from African Locust bean. It is also known as “Iru” and “Ogirilgala” in Yorubaland and Igboland respectively. Soybean, a more readily available and nutritious raw material has been used for production of dawadawa. It is a protein rich substitute for the local dawadawa made from Locust bean.
